Buying MSC-certified snow crab from Canada: an importer's guide

Cooked snow crab clusters and legs ready for export

Snow crab (Chionoecetes opilio) from Atlantic Canada is one of the most sought-after cold-water shellfish in the world, and demand from importers in China, Japan, Korea and the United States continues to grow. If you are sourcing snow crab for one of those markets, here is what matters when you buy from Canada — and how a harvester-owned co-operative like Victoria Co-operative Fisheries fits in.

Why Marine Stewardship Council (MSC) certification matters

MSC certification is the most widely recognised standard for wild-capture sustainability. For an importer it does three things: it satisfies retailer and foodservice sustainability policies, it gives you a documented chain of custody, and it reassures your own customers that the crab comes from a well-managed fishery. Our snow crab is MSC certified, and we can supply the documentation your buyers and auditors expect.

Grades and formats importers buy

Snow crab is sold in several formats, and the right one depends on your market:

  • Brine-frozen sections — the foodservice and retail mainstay, graded by weight (4 oz, 5–8 oz, 8–10 oz, 10 oz and 12 oz) and offered in Gulf and non-Gulf designations.
  • Legs and clusters — premium presentation for retail and white-tablecloth menus.
  • K-pack (broken) sections — value-oriented product for further processing.
  • Cooked meat — picked meat for ready meals and value-added lines.

Live snow crab is also possible in season: our live-shipping programme reaches customers across Canada and abroad.

Live vs frozen for your market

Frozen sections and legs travel well, hold quality and suit programme buyers who need year-round supply. Live crab commands a premium in markets that prize freshness but demands fast, careful logistics. Most export buyers start with brine-frozen sections graded to their spec.

Documents to request

Before you order, ask your supplier for: the MSC chain-of-custody reference, a food-safety certificate (we run to the BRC Global Standard and are CFIA registered), country-of-origin and species documentation, and clear grade and pack specifications. A supplier who can produce these quickly is a supplier you can build a programme with.
